George Chris Colovos JR.

George Chris Colovos Jr. passed away at his home on April 14, 2026. He was born and raised in Scranton, Pennsylvania to the late George Chris and Florence Colovos on January 15, 1947.

He graduated from Mount Pocono High School in 1966. His first job was a Bellhop and waiter at his parent’s resort in the Pocono Mountains called High Point Inn. His creativity in art as a past time led him to Pratt Institute in New York City. Being 3rd generation in restaurant he attended Paul Smith College in upper state New York studying restaurant and hotel management which he continued throughout his life.

He enjoyed working on sports cars mainly Austin Healey and MG but his pride and joy was his 289 Cobra that he raced in Hill Climbs on the weekends in the late 60’s and 70’s put on by the Sports Car Club of America (SCCA). The most memorable were Giants Despair and Hershey.

After a devastating fire that destroyed the famous landmark High Point Inn in 1968, his family packed up everything in 1973 and headed west where his sister Cheryl lived in Portland, Oregon, and his dad bought what he named the Cinnabar Restaurant in Prineville, Oregon and life began a new chapter. In 1986 when his dad semi-retired he handed the reins over to George and built up the business adding off premise catering. He loved the catering business, doing banquets for many organizations OHA, Ducks Unlimited, Les Schwab, Cowboy Dinner Train, Wilderness Trail Ride to name a few.

The Cinnabar was the families pride and joy. It was a stopping ground for people traveling North, South, East or West along with the locals whom we would often see a few times a day. He loved his employees and they stayed for many years and the work they performed showed they loved their job. They sold the Cinnabar in 1996.

He leased Meadow Lakes Restaurant for a few years, was a Charter member of Prineville Rotary Club where the family hosted exchange students from Belgium, Japan, and South Africa. He was in Real Estate but the food industry was always his passion. He loved sailing with his family and friends, had a gift for gab, a great memory and story telling abilities and was very proud of his Greek heritage.

He is survived by his 4 children Reed (Melissa) Colovos, Marcelle (Josh) Howard, Chris (Leslie) Colovos, Nick (Shyla) Colovos, sister Andrea (Glenn) Craley brother in-law Andy Webster, aunt Juana Chappen, 12 grandchildren, several nieces, nephews, cousins, and his ex-wife Linda Groff. He is preceded in death by his parents, George and Florence and sister Cheryl Webster.
